Short hot dogs
Bacon
Hot dog fixin's

Cook bacon 1/2 way and wrap around dogs. Grill for best results but can also broil for 2.5 minutes/side. Serve & enjoy!


Bacon-Wrapped Green Beans

12 oz package bacon
16 oz frozen cut green beans
2 Tbsp brown sugar
salt/pepper to taste

Preheat oven to 350. Spray cooking spray on 13x9 pan. Wrap 3-5 green beans in bacon and place in pan seam-side down. Sprinkle with sugar, salt & pepper. Cook for 20 minutes or until brown (may be up to 35 minutes).


Bacon-Wrapped Pineapple Bites

1 lb bacon
1 can chunked pineapple (large chunks)
1/2 cup brown sugar
toothpicks

Preheat oven to 375. Cover large cookie sheet with foil. Place a cooling rack into the foiled pan. Cut bacon in 1/2 or in 1/4ths. Place brown sugar on a dinner plate. Take bacon and dredge in sugar. Place pineapple on one end of bacon and roll using a toothpick to secure. Place onto cooling rack and cook for 35-40 minutes or until bacon is browned and crispy.

Holiday Bacon Appetizers

1 package Club Crackers
1 lb thin sliced bacon
Grated parmesan cheese or brown-sugar

Lay as many crackers as you wish on a cooling rack inside a cookie sheet. Scoop 1 tsp of grated parmesan onto each cracker. Cut package of bacon in half. Wrap each cracker with bacon making sure to not lose the cheese. The bacon should fit snugly and cover the whole cracker. Bake for 2 hours at 250.

Sweet Bacon Dogs

16 oz package hot dogs
16 slices bacon, cut into thirds
2 cups packed brown sugar

Preheat oven to 425. Spread about 2/3 cup of brown sugar into bottom of 13x9 baking dish. Slice each dog into 3 pieces and wrap with 1/3 slice of bacon. Secure with a toothpick. Arrange 1/2 the wrapped dogs into a single layer in the dish and sprinkle another 2/3 cup of sugar over that. Top with another layer of dogs, followed by remaining sugar. Bake 30-45 minutes stirring a few times. Once bacon is crisp remove dish from oven and transfer contents to slow cooker. Set on high for about 10 minutes, then low to keep warm.


BBQ Jalapeno Poppers

18 whole fresh jalapenos, 2-3 inches in size
8 oz cream cheese, softened
1 green onion chopped small
1/2 cup shredded cheddar cheese
1 lb thin regular bacon, sliced in half
Favorite BBQ sauce
Toothpicks & gloves (if sensitive to peppers)

Cut jalapenos in half length-wise. With a spoon remove the seeds and membrane (leave a little if you want it HOT!). Smear softened cream cheese into each jalapeno half. Wrap with bacon pieces. Secure by sticking toothpick in middle. (At this point you can freeze them uncooked in a storage bag for later use.) Brush BBQ sauce and top with onions. Top with cheddar cheese. Bake on a pan with a cooling rack in a 275 degree oven for 1 hour. Serve warm or at room temp.


Bacon Onion Cheddar Biscuits

2 cups all purpose flour
1 tsp baking powder
3/4 tsp salt
1/4 cup shortening
10 Tbsp whole milk
4 Tbsp vegetable oil
1 egg
10 slices think-cut bacon - fried & crumbled
1 cup finely diced onion, fried
1 cup grated sharp cheddar cheese

Sift dry ingredients. Use pastry cutter to cut in shortening. In separate bowl mix milk, oil and egg and whisk. Combine all ingredients in large bowl. Stir gently to combine. Spoon into mini muffin tins. Bake for 18 minutes at 375 or until golden.

Spinach Quiche with Pine Nuts

1 frozen ready-made whole wheat pie crust (Whole Foods)
2 large cloves garlic
6 cups fresh spinach (washed/dried)
1 tsp dried sage or 1 Tbsp fresh/chopped
1/4 cup pine nuts
1 cup grated mozzerella cheese
1/4 cup parmesan cheese
1 cup milk
2 eggs
1 large red potato
1/2 lb bacon

Preheat oven to 350. Place crust on cookie sheet and let thaw for 10 minutes. Cook for 7-10 minutes or until lightly browned. Cook bacon, drain all but a little grease and cook the garlic, spinach an dsage for about 1 minute until spinach is wilted. Add nuts & crumbled bacon. Grate cheese. Whisk milk & eggs. Slice potato thinly. Layer the cheese, 1/2 spinach mixture, potatoes and repeat. Then pour the egg mixture on top. Bake 45-50 minutes or until knife inserted comes out clean.
